Chicken Jalfrezzi

chicken breasts, diced 

onion, chopped

pepper, sliced

green chilli, chopped

clove garlic, minced

1 tbsp coriander

1 tsp red chilli

1 tsp cumin

1 tsp tumeric 

400g tinned tomatoes

500ml water

  • Fry onion until golden.
  • Add pepper, chilli and garlic, fry off.
  • Add chicken, fry until browned. 
  • Add spices, coat everything.
  • Add tomatoes and water*
  • Simmer until sauce has thickened and reduced.

* alternatively at this stage you could transfer everything into a slow cooker and cook on high for 3 hours or on low for 10 hours.
