300g granulated sugar

4 litres sparkling water

  • Roll each lemon across the kitchen counter before juicing.
  • Add the juice to a large pan, add the sugar.
  • Over a low heat, warm up the mixture and stir frequently until the sugar has dissolved. 
  • Leave to cool.
  • According to taste pour around 10ml into a long glass and top up with sparkling water. 
  • Refreshing as is and also a good mixer for vodka or gin.
