potato salad

750g new potatoes, quartered

100g greek yoghurt or homemade mayonnaise 

100g feta cheese, crumbled (optional)

30ml olive oil

15ml white wine vinegar

1 tsp dried dill or handful each of parsley and mint, finely chopped

1/2 tsp dijon mustard

freshly ground pepper

handful radishes or spring onion, finely chopped (optional)

1 tsp capers, finely chopped (optional)

  • Boil the potatoes in salted water until cooked, drain and leave to cool.
  • Mix all the other ingredients together in a bowl.
  • Add the potatoes and gently stir through the mixture.
