red lentil and chorizo soup

 

500g dried red lentils

250g chorizo, diced

1.5 litres stock

1 x 400g tinned tomatoes

Red wine vinegar

  • Add lentils and stock to a large pot.
  • Bring to the boil, then turn down the heat to a simmer.
  • Stir occasionally and add extrawater if necessary. 
  • When the lentils have softened, add tinned tomatoes. Stir and heat through.
  • Fry the sliced chorizo. 
  • Serve soup, add chorizo and a dash of red wine vinegar.
