Rotolo di agnello con pecorino
1kg leg of lamb
25g pecorino, shaved
rosemary
sea salt
freshly ground pepper
Preheat oven gas mark 5.
Butterfly the lamb.
Sprinkle over herbs, salt and pepper.
Scatter the pecorino cheese over the lamb.
Roll up the lamb, tie securely with string and place in a roasting tin seam side down.
Cook for around an hour.
Remove lamb from the oven, cover it with foil and leave to rest for 15 minutes.
