Rotolo di agnello con pecorino

1kg leg of lamb

25g pecorino, shaved

rosemary

sea salt

freshly ground pepper

  • Preheat oven gas mark 5.
  • Butterfly the lamb.
  • Sprinkle over herbs, salt and pepper.
  • Scatter the pecorino cheese over the lamb.
  • Roll up the lamb, tie securely with string and place in a roasting tin seam side down.
  • Cook for around an hour.
  • Remove lamb from the oven, cover it with foil and leave to rest for 15 minutes.
