Rotolo di agnello con pecorino
1kg leg of lamb
25g pecorino, shaved
freshly ground pepper
- Preheat oven gas mark 4.
- Butterfly the lamb.
- Sprinkle over herbs, salt and pepper.
- Scatter the pecorino cheese over the lab.
- Roll up the lamb, tie securely with string and place in a roasting tin seam side down.
- Cook for around an hour.
- Remove lamb from the oven, cover it with foil and leave to rest for 15 minutes.
