sautéed potatoes

500g new potatoes, sliced

3 tbsp oil

1 tbsp butter

4 tbsp water

freshly ground pepper

pinch of sea salt

  • Heat the oil and butter on a high heat in a pressure cooker.
  • Fry the potatoes, turning them over with a wooden spoon until they are browned.
  • Season with salt and pepper and add the water.
  • Close the lid, bring to a high pressure and cook for 5 minutes. 
  • Remove from the heat and leave until the pressure drops.
