500g new potatoes, sliced
3 tbsp oil
1 tbsp butter
4 tbsp water
freshly ground pepper
pinch of sea salt
- Heat the oil and butter on a high heat in a pressure cooker.
- Fry the potatoes, turning them over with a wooden spoon until they are browned.
- Season with salt and pepper and add the water.
- Close the lid, bring to a high pressure and cook for 5 minutes.
- Remove from the heat and leave until the pressure drops.
