150ml hot stock
2 tbsp olive oil
1 tbsp ground cumin
1 tbsp ground coriander
1 tsp paprika
pinch of salt and ground pepper
- Place couscous in a bowl, pour over hot stock and cover for 30 minutes.
- Remove the cover and allow to completely cool.
- Add the other ingredients and stir through with a spoon.
Ideal to leave in the fridge for a few days and use as a quick addition to lunches or dinner.
