spiced couscous

125g couscous

150ml hot stock

2 tbsp olive oil

1 tbsp ground cumin

1 tbsp ground coriander

1 tsp paprika

pinch of salt and ground pepper 

  • Place couscous in a bowl, pour over hot stock and cover for 30 minutes.
  • Remove the cover and allow to completely cool.
  • Add the other ingredients and stir through with a spoon.

Ideal to leave in the fridge for a few days and use as a quick addition to lunches or dinner.
