venison haunch

750g venison haunch

thyme

couple pinches of sea salt

freshly ground pepper

extra virgin olive oil

  • Preheat the oven at gas mark 4.
  • Butterfly the venison, sprinkle over thyme, salt and pepper.
  • Roll, tie with string and place into a roasting tin seam side down.
  • Drizzle with olive oil and sprinkle over additional salt.
  • Roast for 40-45 minutes.
  • Remove from oven, cover with foil and rest for 15 minutes.
