750g venison haunch
couple pinches of sea salt
freshly ground pepper
extra virgin olive oil
- Preheat the oven at gas mark 4.
- Butterfly the venison, sprinkle over thyme, salt and pepper.
- Roll, tie with string and place into a roasting tin seam side down.
- Drizzle with olive oil and sprinkle over additional salt.
- Roast for 40-45 minutes.
- Remove from oven, cover with foil and rest for 15 minutes.
